
My passion for food developed during the many years I spent in France as a child, in which my mother taught me the foundations of Mediterranean cooking.
I reached the national pub chef of the year 2004 finals through my work as head chef at The Manor in Croyde. I moved to the Saunton Sands Hotel, which is a 4 star hotel with 2 red rosettes for its food. I worked under renowned local chef Graham Brundle (personal chef to the king of Jordan and Richard Branson).
Whilst at the Saunton Sands I benefited from several working visits to the Dorchester Hotel in London in which I acted as a senior chef de partie on the banqueting section cooking for a few famous people, the Tottenham football team, the sultan of Brunei, to name but a few.
I am a firm believer in locally sourced food with simple flavours so as not to overcomplicate the palate.
